Creating masks in illustrator is an important thing to know and the best way to learn how to use it after reviewing tutorials is to jump in and try it.
As with anything else, it just requires practice practice practice.

Here is a collection of tutorials for that: illustrator clipping mask - Google Search

I'm still trying to learn all the new stuff in CS5!

I remember not being able to wrap my head around clipping masks - then I learned the shortcut and now I use them all the time without thinking about it.

just make the mask shape - select it and the thing you want to mask (make sure the mask is on top - color/stroke doesn't matter) and hit COMMAND + 7. To undo it, hit OPTION+COMMAND+7.

I also use the mask in the transparency window a lot - you can make a lot of mesh gradient-like effects without having to setup a a gradient mesh

haha - no, I DO hate the mesh tool. I just never had a use for it and it takes me longer to get what I want than it does to just make a few quick opacity masks.

Mesh tool is just awefull also bit unprectable some times. Masking is super easy in illustrator just draw the shape of the mask select stuff right click make mask nothing hard about it. Especially transparent gradient mask can make stuff have more realistic shine or gloss.

I have a love/hate relationship with the mesh tool. I find it to be great for things like fruit for some reason.
