To check the browser's compatibility in Adobe dreamweaver:

Open the document that you need to check browser compatibility for. To the far right of the menu bar look for ‘Check Page’ button. Click on the ‘Check Page’ button and a drop down menu will expand. From that drop down menu, click on ‘Check Browser Compatibility’. A result window with all issues you need to address will appear at the bottom of the window.

Does this check the compatibility of all browsers or just the browsers you have installed?

it solely depends on which version of Dreamweaver you are using. simply put it targets all modern browsers including firefox, IE, google chrome, opera, safari and others, though the latest version of the program, namely DW CS6 supports the latest browser versions.
